A wine-maker's work follows the seasons, up until the climactic moment of the harvest. After nature's winter rest, cold in the south of France with the strong mistral wind, comes the time of rebirth.

Slowly, very slowly, near the end of March, the vineyards begin to "weep" - the tears that fall from the end of the pruned branches are the plant's sap that is rushing to bring its energy to the sleepy vines. Local legend says that if young girls wash their faces with the first tears of the vines, they will have a clear complexion.

In April, the first buds open and tiny very fragile leaves begin to appear. The month of May covers the vineyard plains with a tender light green.
